Going "Green" with Fondant Cut-outs

In homage to my dad, who is now referred to as 'Grandpa' by everyone in the family, I made this cookie sandwich to celebrate Father's Day this weekend.

  It is both personal & delicious - everything a decorated cookie should be.

  A simple chocolate ganache (like what you'd find in a macaroon) is laid between two vanilla sugar cookies. 

The putting green is a thin round of marshmallow fondant with some "rough" (higher grass) of green sprinkles. 

The hole marker is actually a bamboo pick with a small piece of molded taffy (Airheads candy) as the flag. 

The pick will come in handy when you're trying to get out those small bits of taffy still stuck in your teeth.
Using fondant cut-outs on cookies is becoming very popular these days.
While fondant has become the dominant icing choice for cakes, likewise I think it will be more widely used in cookie decorating going forward.
  With fondant, you get a very precise cut to the edges of your shapes - whether they be letters, numbers, flowers, etc. And, of course, the smooth finish is very elegant and visually pleasing. Fondant topping is also an excellent way to make your cookies more 3-D as it is easy to layer on top of it.
So just remember: Fondant - not just for cakes anymore.
