quick cookie tips!

Here are some really fun cookie pops I did for a couple's engagement party. The two had recently returned from a vacation at Disney World, where the groom-to-be surprised his bride-to-be with a proposal fit for a princess! 

A couple of quick tips I discovered on this cookie design…..
When doing cookie pops, make sure that you roll your dough at 1/4" to 3/8" thick. Otherwise, there may not be enough dough to encase the cookie stick and keep it securely in your cookie after baking. 

Another tip: Often when you need to tint your icings really dark, saturated colors (like black, red, dark blues & purples), you end up putting ALOT of gel coloring in the icing to get it the bold shade you need. 
This can really end up giving the icing a bitter flavor. To prevent having to use an enormous amount of gel coloring, add some cocoa powder to your icing base. This will tint the normally white icing so that you'll be starting with a darker base from the beginning. It should then require much less coloring to achieve the dark shade you're going for, and that will keep your icing from being bitter and overpowering the delicious sugar cookie underneath.
