Fondant - Not Just for Cakes Anymore!
We've seen them all... The exquisite, towering cakes created on TV shows or the detailed, sculpted cakes that adorn the wedding mags these days. One thing that many of them have in common: rolled fondant icing. Technically, fondant is a candy coating that's rolled out like pie dough and then draped, cut and shaped into a design of your choice. Like clay to a sculptor, fondant is the ultimate medium for baking artisans as it can be molded into just about anything.
Nowadays, fondant is becoming popular on the tops of cookies as well. I recently did some cookies with geometric patterns for a "preppy chic" party. Using rolled fondant, I was able to give the design sharp, clean lines and keep the pattern identical, which would have been almost impossible with a fluid royal icing. For the same event, we also did some flower designs in fondant. In these you can especially see the smooth texture and the sculpted, dimensional qualities of the cut-out flowers. The results are a group of very elegant and modern cookies.
One thing I highly recommend to customers before choosing fondant for your cookies.... if you haven't already, do a taste test first. Fondant recipes vary greatly and can be flavored to accentuate the taste. In the end, your cookies should taste as great as they look!
